As revealed at Seatrade Cruise Global 2016, Seabourn Line has not only partnered up with world-renowned chef Thomas Keller, as was previously announced, but also master mixologist Brian Van Flandern to elevate the culinary and drink offerings fleet-wide and aboard the forthcoming Seabourn Encore. Plus, the new ship will introduce The Retreat for the ultimate in open-deck serenity.The Grill by Thomas KellerHaving both worked together before, The Grill by Thomas Keller is a new complimentary specialty restaurant experience with interior design by Adam D. Tihany, what he calls “a portrait of a chef.” The Grill will debut aboard the Seabourn Quest (rendered below) in May 2016 in a 44-guest configuration that replaces the former Restaurant 2 space here as well as on the Seabourn Sojourn and Seabourn Odyssey during their next dry-dock refurbishments. On the new Seabourn Encore, the dining room (rendered in the header above) will have a larger capacity of 94 guests, located in the aft of the ship with an outdoor deck area.

Tihany, The Grill by Thomas Keller will take our already award-winning cuisine to new heights.”READ MORE: New Seabourn Encore Suite Design RevealedSeabourn is committed to offering a consistent product across its fleet, although The Grill will be a classic American chophouse with distinct designs on the existing Odyssey-class ships that will exhibit curved paneling and the Encore which will sport a more open aesthetic. Menus will include popular items like table-side prepared Caesar salad as well as Lobster Thermidor and creamed spinach.Daily dinner reservations for The Grill onboard the Seabourn Quest will open in April, and there will be no service charge.
